Make a simple, high-protein Vanilla Mousse using cottage cheese! This easy, no-bake recipe blends cottage cheese with sweetener and extracts until perfectly smooth and creamy.

Ingredients

(Based on 1x column, makes about 4 servings)

Mousse:

  • ▢ 2 cups cottage cheese (4% or 2% fat recommended)
  • ▢ 1/4 cup honey or maple syrup (adjust to taste)
  • ▢ 2 teaspoons vanilla extract
  • ▢ 1/2 teaspoon almond extract (optional)

Garnish (Optional):

  • ▢ Fresh berries (strawberries, raspberries, blueberries)
  • ▢ Chocolate shavings

Instructions

1. Combine Ingredients in Blender:

  • Place the cottage cheese, honey or maple syrup, vanilla extract, and optional almond extract into the container of your blender or food processor.

2. Blend Until Smooth:

  • Secure the lid tightly. Blend the mixture on high speed until it is exceptionally smooth, creamy, and completely free of any cottage cheese curds. This is the most crucial step and may take 1-3 minutes depending on your blender’s power.
  • Stop periodically to scrape down the sides of the blender jar with a rubber spatula to ensure everything incorporates evenly. The final texture should resemble thick yogurt or traditional mousse.

3. Portion into Glasses:

  • Spoon the blended vanilla mousse evenly into four serving glasses or small dessert bowls.

4. Chill:

  • Place the serving glasses in the refrigerator. Chill for at least 1 hour before serving. This allows the mousse to firm up slightly and the flavors to meld.

5. Garnish and Serve:

  • Just before serving, garnish the chilled mousse with fresh berries or chocolate shavings, if desired.
  • Serve cold.
