Ingredients

(Based on 1x column, makes about 4 servings)

Mousse:

  • ▢ 2 cups cottage cheese (4% or 2% fat recommended for creaminess)
  • ▢ 1/2 cup peanut butter (creamy or chunky)
  • ▢ 1/4 cup honey or maple syrup (adjust to taste)
  • ▢ 1 teaspoon vanilla extract

Garnish (Optional):

  • ▢ Chopped peanuts
  • ▢ Mini chocolate chips
  • ▢ Sliced banana

Instructions

1. Combine Ingredients in Blender:

  • Place the cottage cheese, peanut butter, honey or maple syrup, and vanilla extract into the container of your blender or food processor.

2. Blend Until Smooth:

  • Secure the lid and blend the mixture on high speed until it is completely smooth, creamy, and well combined. This might take 1-3 minutes depending on the power of your appliance.
  • Stop occasionally to scrape down the sides of the container with a rubber spatula to ensure everything is incorporated and there are no remaining cottage cheese curds. The final texture should be smooth like thick pudding or mousse.

3. Portion into Glasses:

  • Spoon the blended peanut butter mousse evenly into four serving glasses or small bowls.

4. Chill:

  • Place the serving glasses in the refrigerator and chill for at least 1 hour before serving. Chilling allows the mousse to firm up slightly and the flavors to meld.

5. Garnish and Serve:

  • Just before serving, garnish the chilled mousse with chopped peanuts, mini chocolate chips, or sliced banana, if desired.
