1. Prepare the Glaze:
- In a small bowl, whisk together the balsamic vinegar, honey, minced garlic, dried thyme, salt, and pepper until well combined.
2. Arrange Chicken and Tomatoes in Slow Cooker:
- Place the boneless, skinless chicken breasts in the bottom of your slow cooker insert.
- Pour the prepared balsamic glaze mixture evenly over the chicken breasts.
- Scatter the halved cherry tomatoes on top of the chicken and around it in the slow cooker.
3. Slow Cook:
- Place the lid securely on the slow cooker.
- Cook on the LOW setting for 6-7 hours OR on the HIGH setting for 3-4 hours. The chicken should be cooked through (internal temperature 165°F/74°C) and very tender.
4. Serve:
- Once cooked, you can serve the chicken breasts whole, sliced, or shredded slightly with two forks directly in the sauce.
- Serve the chicken hot, spooning plenty of the balsamic glaze and softened tomatoes from the slow cooker over the top.
- Garnish generously with fresh chopped basil just before serving.
