Easy Slow Cooker Balsamic Glazed Chicken

Make tender and flavorful Balsamic Glazed Chicken in your slow cooker! This easy recipe features chicken breasts simmered in a sweet and tangy balsamic-honey glaze with cherry tomatoes.

Ingredients

  • ▢ 4 boneless, skinless chicken breasts
  • ▢ 1/2 cup balsamic vinegar
  • ▢ 1/4 cup honey
  • ▢ 2 cloves garlic, minced
  • ▢ 1 tsp dried thyme
  • ▢ Salt and pepper, to taste (start with ~1/4 tsp each)
  • ▢ 1 cup cherry tomatoes, halved

Garnish:

  • ▢ Fresh basil, chopped

For Serving (Optional):

  • ▢ Cooked rice, quinoa, pasta, or roasted vegetables
  • ▢ Crusty bread

Instructions

1. Prepare the Glaze:

  • In a small bowl, whisk together the balsamic vinegar, honey, minced garlic, dried thyme, salt, and pepper until well combined.

2. Arrange Chicken and Tomatoes in Slow Cooker:

  • Place the boneless, skinless chicken breasts in the bottom of your slow cooker insert.
  • Pour the prepared balsamic glaze mixture evenly over the chicken breasts.
  • Scatter the halved cherry tomatoes on top of the chicken and around it in the slow cooker.

3. Slow Cook:

  • Place the lid securely on the slow cooker.
  • Cook on the LOW setting for 6-7 hours OR on the HIGH setting for 3-4 hours. The chicken should be cooked through (internal temperature 165°F/74°C) and very tender.

4. Serve:

  • Once cooked, you can serve the chicken breasts whole, sliced, or shredded slightly with two forks directly in the sauce.
  • Serve the chicken hot, spooning plenty of the balsamic glaze and softened tomatoes from the slow cooker over the top.
  • Garnish generously with fresh chopped basil just before serving.
