Easy Slow Cooker Sweet and Sour Pork

Make delicious Sweet and Sour Pork easily in your slow cooker! This simple recipe features tender pork tenderloin, pineapple, peppers, and onions in a homemade sweet and tangy sauce.

Ingredients

  • ▢ 1.5 lbs pork tenderloin, cut into bite-sized (~1 inch) pieces
  • ▢ 1 cup pineapple chunks (fresh or canned in juice, drained)
  • ▢ 1 bell pepper (any color), chopped
  • ▢ 1 onion, chopped
  • ▢ 1/2 cup soy sauce (low-sodium recommended)
  • ▢ 1/2 cup ketchup
  • ▢ 1/4 cup brown sugar, packed
  • ▢ 2 cloves garlic, minced
  • ▢ 1 tsp fresh ginger, grated
  • ▢ Salt and pepper, to taste (optional, soy sauce is salty)

For Serving:

  • ▢ Cooked rice (jasmine or white recommended)

Instructions

1. Prepare Ingredients:

  • Cut the pork tenderloin into bite-sized, roughly 1-inch pieces.
  • Chop the bell pepper and onion. Mince the garlic and grate the fresh ginger. Drain canned pineapple if using.

2. Combine Ingredients in Slow Cooker:

  • Place the bite-sized pork pieces into the insert of your slow cooker.
  • Add the pineapple chunks, chopped bell pepper, and chopped onion on top of and around the pork.
  • In a small bowl, whisk together the soy sauce, ketchup, packed brown sugar, minced garlic, and grated fresh ginger. Pour this sauce mixture evenly over the pork and vegetables in the slow cooker.
  • Stir everything together gently to ensure the pork and vegetables are reasonably coated with the sauce ingredients. Add a pinch of black pepper if desired (salt may not be needed due to soy sauce).

3. Slow Cook:

  • Place the lid securely on the slow cooker.
  • Cook on the LOW setting for 6-7 hours OR on the HIGH setting for 3-4 hours. The pork should be tender and cooked through. (Note: Check tenderloin earlier, especially on HIGH, as it can overcook faster than pork shoulder).

4. Serve:

  • Once the cooking time is complete and the pork is tender, give the mixture a good stir.
