Ingredients

Mousse:

  • ▢ 2 cups cottage cheese (4% or 2% fat recommended)
  • ▢ 1 cup fresh strawberries, hulled (plus more for garnish)
  • ▢ 1/4 cup honey or maple syrup (adjust to taste)
  • ▢ 1 teaspoon vanilla extract

Garnish (Optional):

  • ▢ Fresh strawberries, sliced or whole
  • ▢ Fresh mint leaves

Instructions

1. Combine Ingredients in Blender:

  • Place the cottage cheese, 1 cup of hulled fresh strawberries, honey or maple syrup, and vanilla extract into the container of your blender or food processor.

2. Blend Until Smooth:

  • Secure the lid tightly. Blend the mixture on high speed until it is exceptionally smooth, creamy, and evenly pink. This is crucial and may take 1-3 minutes depending on your blender.
  • Stop periodically to scrape down the sides of the container with a rubber spatula to ensure all ingredients are fully incorporated and no cottage cheese curds remain. The texture should be like a thick smoothie or traditional mousse.

3. Portion into Glasses:

  • Spoon the blended strawberry mousse evenly into four serving glasses or small dessert bowls.

4. Chill:

  • Place the serving glasses in the refrigerator. Chill for at least 1 hour before serving. This allows the mousse to firm up slightly and the flavors to meld.

5. Garnish and Serve:

  • Just before serving, garnish the chilled mousse with additional fresh strawberries (sliced or whole) and fresh mint leaves, if desired.
  • Serve cold.
