Simple Glazed Roasted Carrots (Honey Garlic Butter)

Instructions

1. Prepare Oven, Baking Sheet, and Carrots:

  • Preheat your oven to 425°F (220°C).
  • Grease a large baking sheet lightly or line it with parchment paper for easy cleanup.
  • Wash, peel (if desired), and cut the carrots diagonally into substantial 2-3 inch pieces. Place the cut carrots in a large bowl.

2. Make the Honey Garlic Butter Glaze:

  • Melt the 5 tablespoons of butter in a small saucepan over medium-low heat (or in a microwave-safe bowl).
  • Add the minced garlic to the melted butter. Cook, stirring, for about 2-3 minutes until the garlic is fragrant and very lightly golden. Be careful not to burn the garlic.
  • Remove the saucepan from the heat and immediately stir in the 2 tablespoons of honey until combined.

3. Toss Carrots with Glaze and Seasoning:

  • Pour the warm honey garlic butter glaze over the prepared carrots in the large bowl.
  • Sprinkle with the salt and fresh ground black pepper.
  • Toss the carrots thoroughly until they are evenly coated with the glaze and seasonings.

4. Roast the Carrots:

  • Spread the glazed carrots onto the prepared baking sheet in a single, even layer. Do not overcrowd the pan (use two sheets if necessary) – this ensures they roast properly rather than steam.
  • Place the baking sheet in the preheated oven.
  • Bake for 22-25 minutes, or until the carrots are tender when pierced with a fork and have developed nicely browned, caramelized edges. You can toss them halfway through baking if desired for even browning.

5. Garnish and Serve:

  • Once tender and browned, remove the baking sheet from the oven.
  • Taste a carrot and adjust seasonings with a little more salt or pepper if needed.
  • Transfer the roasted carrots to a serving dish.
  • Garnish generously with fresh chopped parsley just before serving. Serve hot.
