Ingredients

Meat Topping:

  • ▢ 1/4 cup black olives, sliced
  • ▢ 1/4 cup bell pepper, diced (any color)
  • ▢ 1/4 cup red onion, diced
  • ▢ 1 teaspoon garlic powder
  • ▢ 1 teaspoon Italian seasoning
  • ▢ Salt and pepper, to taste

Assembly:

  • ▢ 8 flour tortillas (soft taco size)
  • ▢ 1/2 cup shredded mozzarella cheese (or more, to taste)

Instructions

1. Cook Ground Beef:

  • Preheat the oven to 350°F (175°C) – primarily for warming tortillas and final melting.
  • In a large skillet, brown the ground beef over medium-high heat until cooked through. Break it apart with a spoon as it cooks.
  • Drain off any excess fat thoroughly.

2. Sauté Meats, Veggies & Seasonings:

  • Add the diced pepperoni, crumbled cooked bacon, sliced cooked sausage, diced bell pepper, and diced red onion to the skillet with the cooked ground beef.
  • Sprinkle in the garlic powder, Italian seasoning, salt, and pepper.
  • Sauté the mixture for about 5 minutes, stirring occasionally, allowing the flavors to blend and the vegetables to soften slightly.

3. Warm Tortillas:

  • Place the stack of tortillas on a baking sheet or wrap them loosely in foil.
  • Place them in the preheated oven for just 2-3 minutes, until they are soft and pliable. Watch carefully so they don’t get crisp.

4. Assemble the Pizza Tacos:

  • Remove the warm tortillas from the oven. Lay them flat on your baking sheet(s).
